Executive Chef – GABRIELE ENRICO

A profile of excellence, many years of experience as a food & beverage consultant in the largest luxury hotel chains. In 2009 he founded Avalon Food & Consulting, Consulting and Food Production Company for the High Catering and Hotellerie sector. Currently he works as a consultant at Città del Gusto Gambero Rosso as a teacher and operative coordinator of the schools in Northern Italy. His passion and his love for cooking is transmitted in all his delicious creation.

Resident Chef Maurizio Lustrati

Roman chef with significant experience in the world of hospitality in Italy and abroad, Maurizio Lustrati leads the brigade at 47 Circus Roof Garden. Selection of the best local raw materials, respect for seasonality, and reinterpretation of Italian culinary tradition make up his stylistic signature, perfectly shared with the property, which involved him in the “47 Hortus” project. The approximately 4-hectare land in the Marturanum Regional Park in Tuscia, with more than 200 olive trees, yielded its first fruits in November: a 100% Italian extra virgin olive oil.
